Winter squash: acorn maple
Prick the surface of a medium acorn squash to allow steam to escape.
- Microwave on HIGH for 7 to 10 minutes, or until almost tender. (The time varies depending on your microwave and the size of the squash.)
- Cut the squash in half and remove the seeds. Place open side up on a baking dish.
- Fill with walnut or pecan halves.
- Sprinkle 1/4 teaspoon (1 ml) Chinese Five Spice over the nuts in each squash or use a combination of cinnamon and nutmeg.
- Mound 2-3 tablespoons (30-45 ml) of brown sugar on top of the nuts in each squash.
- Pour 1-2 tablespoons (15 -30 ml) of maple syrup on top of the sugar. (Optional)
- Top each squash with 1 tablespoon (15 ml) of butter or margarine.
- Microwave on HIGH for 2 to 5 more minutes until the butter melts and squash is tender.
One squash makes two servings.
